Copycat Cinnabon Cinnamon Rolls + Horses and Other Updates

Today I’m sharing one of our family’s absolute favorite recipes, Copycat Cinnabon Cinnamon Rolls and I dare say these are better than the original! Plus, I’m going to catch you up to date with everything that’s going on with us right now!

The last couple weeks have been kind of out of our ordinary schedule. First of all, we made the trip back to Blacksburg, Virgina {about a four hour drive from our house} to see the horse, Theo, that Laura was considering. This is the horse we went to see the Monday after Thanksgiving and she ended up falling and breaking her arm really bad.

We had decided not to purchase the horse at the time, but over the last few months as she’s had a lot of time to think, she kept watching the videos I had taken of her ride before the fall and she couldn’t stop thinking about that horse!

A couple weeks ago she comes to me and says, “Mom, I’ve been praying and praying about it and I just keep coming back to Theo.”

How could I argue with that? So we made another appointment and took her to see Theo again even though she’s still in a sling and can’t ride for a couple more months.

We’ll be picking him up at the end of this week sometime. Laura’s so excited! He’s a beautiful horse, very sweet, and pretty laid back. I’ll share more about him when we finally get him.

I had thought we would get back to a more normal routine in January, but I forgot we had our annual minister’s meetings this week in Gatlinburg, Tennessee so we ended up staying there Monday – Friday of this past week.

I have to say, if nothing else it was relaxing! We dropped off our puppy, Annie at Hannah’s coach’s house and he watched her for the week. And we stayed in a hotel with a kitchenette so we were able to eat a lot of our meals in the hotel room. We did go out to eat a few times, but I mostly prepared some simple meals in the room which was nice because that meant we could relax and not go anywhere!

On Tuesday, the pastor’s wives went to this fantastic little shop in Gatlinburg called The Spinnery. I took Hannah and Laura with me and we enjoyed watching the artists demonstrate different yarn arts.

It was really fun! I was gifted a $50.00 gift card and I ended up purchasing a small hook rug “mug rug” or coaster to make {it’ll look like that little square sheep one above}, as well as two tins of lotion bars, a handmade rug, and a little sheep figurine for my printer’s box.

The girls and I went to the outlet mall in Pigeon Forge one afternoon. We love Levi jeans and Laura needed new jeans really bad, so we went to Levi outlet store. We each got two pairs of jeans for about $22.00 each!

We also went to the Guiness Book of World Records attraction. That was a lot of fun. The girls and I competed on different world records and it was just a lot of fun and lots of laughs.

Laura woke up last Sunday and decided she wanted to make cinnamon rolls. You guys. She’s never made yeast bread before. I love to bake bread and really enjoy the entire process. I guided her and gave her advice but she made these all by herself. And they turned out amazing!

Copycat Cinnabon Cinnamon Rolls

This simple recipe is a great starter recipe if you aren't used to making yeast breads. So easy, and they taste so yummy! Perfect for breakfast or dessert, holidays or everyday. You can't go wrong with this recipe!

Ingredients

  • 1 cup milk
  • 2 eggs room temperature
  • 1/3 cup butter room temperature
  • 4 - 4 1/4 cups bread flour (plus extra for rolling)
  • 1/2 teaspoon salt
  • 1/2 cup white sugar
  • 1 package active dry yeast
  • Filling
  • 1 cup brown sugar packed
  • 3 tablespoons ground cinnamon
  • 1/3 cup butter softened
  • Frosting
  • 4 ounce cream cheese softened
  • 1/4 cup butter softened
  • 1 1/2 cups confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

  1. Combine 2 cups of the flour and yeast in a large mixing bowl - we used the bowl of our Kitchen Aid mixer. In a small saucepan, combine milk, butter, sugar and salt and cook over heat until the temperature reaches 120 degrees. The butter will be almost melted. Add milk mixture to flour mixture along with eggs and mix with an electric mixer on low for 30 seconds.
  2. Add in remaining flour and combine. Switch to dough hook and continue to knead the dough until it is very smooth and elastic. This will take about 5-10 minutes. In a large bowl, pour a little oil. Shape dough into ball and place the ball of dough on top of oil, flip to coat. Cover bowl with plastic wrap and let dough rest for about 15 minutes.
  3. Meanwhile, in a small bowl, combine brown sugar and cinnamon and set aside.
  4. Roll the dough into a 18x21 inch rectangle. This can take a little work. Just be patient. Spread 1/3 cup butter on the dough and top with the brown sugar and cinnamon mixture.
  5. Starting with the long side, roll up dough so you have an 18" log. Cut into 12 even rolls. We used a very sharp knife. You want to make sure not to crush the dough and don't flatten out the rolls as you cut. Cut gently.
  6. Grease a 9x13 inch baking pan and place the rolls in the pan so that the cut sides are up. Cover rolls with plastic wrap and a kitchen towel and let rise in a warm place until nearly doubled, about 45 minutes.
  7. Preheat oven to 400 degrees F. Bake rolls on the center rack about 15 minutes or until lightly browned.
  8. While the rolls are baking, combine cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt with a mixer until fluffy. Allow rolls to cool for about 10-15 minutes and spread frosting on warms rolls.
