Taco Salad

This is one of my favorite go-to meals when I’m in a hurry!
Taco Salad
1 bag tortilla chips
1 can kidney beans, rinsed and drained
1 head of iceberg lettuce, chopped
1 – 2 tomatoes, chopped
1 onion, chopped
1 can veggie burger or 1 pkg. frozen veggie burger crumbles
1 large bottle thousand island dressing
8 oz. shredded cheddar cheese
In a frying pan, cook onions and burger until onions are tender. Allow mixture to cool slightly before adding it to a large bowl. Add remaining ingredients to burger mixture and toss to coat everything well with the dressing.
Serve and enjoy!
