Mock Fish Sandwich

As soon as I watched this video tutorial for a vegan version of McDonald’s Fish Sandwich, I knew I had to try it.

Don’t be afraid to try this recipe, just because it’s vegan – everyone in my family loved it! One eggplant served my large family with leftovers.

Mock Fish-O-Fillet Sandwich

Ingredients

  • 1 eggplant
  • flour
  • Panko bread crumbs
  • egg replacer {you could use a beaten egg}
  • salt
  • water
  • oil for frying

Optional Ingredients for Serving

  • lettuce
  • tartar sauce
  • hamburger buns
  • sliced cheese or vegan cheese

Directions

Begin by peeling your eggplant. Slice into 1/2 inch slices. Cut slices into squares by cutting off rounded edges if desired. Soak sliced eggplant in a salt water bath for about an hour. I placed a weighted plate on top to keep the eggplant from floating. This helps remove any bitterness from the eggplant slices.

Heat oil {about 1/4 inch – 1/2 inch deep} over medium heat until hot – or use your deep fryer. After soaking the eggplant, you want to have three bowls or dishes filled with:

  1. flour
  2. egg replacer or beaten eggs
  3. Panko bread crumbs

To make the egg replacer, I mixed up about a cup of Ener-G Egg Replacer {use your favorite} as that’s what I had on hand.

First you want to coat the eggplant slices in flour, then egg replacer, then Panko Bread crumbs.

Carefully drop coated eggplant slices into hot oil, being careful not to splash yourself. Cook on each side until golden brown or 3 – 5 minutes on each side. Drain cooked eggplant onto paper towels.

Steam your hamburger buns, if desired. Assemble sandwiches to your preference. I used buns, lettuce, and tartar sauce. Serve and enjoy!
