This was a fun and simple lunch box to put together. Who doesn’t like Pigs in a Blanket? Even my husband wolfed these down.

We spend one day a week at the ice rink so my daughter Hannah can get her practice in – plus have lessons. A couple of weeks ago our schedule changed a little as she’s moved up to Freestyle classes. We leave home by 9 am and drive to Knoxville which is a 2 1/2 hour drive from our house. Hannah practices {intensely} on the ice from 12:00 pm to 5:30 and then at 5:45 she has her stroking class until 6:30 when she has her Freestyle class. At 7:00 she has her private lesson. And then, usually by 8:00 pm, we head home – cold and very tired – and arrive home around 10:30 pm.

The weather has changed and let me tell you, this past Monday was so cold. I generally stand in the ice rink the entire day and coach Hannah so she sees marked improvement from the previous week. She’s worth it – and watching her faithfully practice the same moves over and over and over again for 5 hours straight is pretty amazing – she loves ice skating. Our usually 5 1/2 hours days at the ice rink have gone to 8 hours at the ice rink. She takes her skates off around 3:30 pm for half an hour to give her poor feet a break and then they are back on.

Since the days are so very long, I’ve been packing our Easy Lunch Boxes for lunch and then bringing along stuff to make sandwiches for supper. I’ve thought about getting another set of Easy Lunch Boxes to pack a simple supper in – maybe even something I can microwave. Might even be a good time to use leftovers from supper the night before. I’ll let you know if I do! The great thing about being at an ice rink – I just have to set my lunch bag inside the rink and it’s like being in the refrigerator, so nothing will spoil.

What I Packed

Our Pigs in a Blanket were vegetarian. Did you know you could by vegetarian hot dogs? You can find them in the produce section of most grocery stores or at health food stores. Mine came from Amazon.com in a can.

We love the jars of Five Bean Salad from Sam’s Club. Clementines are our favorite fruit and they are perfect for a lunch because they’re so easy to peel! San Pellegrino Pompelmo  Italian soda is one of the most delicious sodas I’ve ever had and it’s always a special treat when I get one!

I wrapped the hot dogs in crescent rolls and baked them until they were golden brown and beautiful. You can use the canned stuff or use my delicious recipe for Homemade Crescent Rolls. I placed a napkin from the Dollar Tree under them to insure the Pigs in a Blanket didn’t sweat.

This easy lunch box was super simple to put together. The girls enjoyed it, too!
