So, until recently I had never had an Uncrustable peanut butter and jelly sandwich. We spent the first week of August at our annual pastor’s retreat {my husband is a pastor} and on the last day, they sent us home with sack lunches that included among other things, an Uncrustable sandwich.

I had always thought they would be gummy and not so good – especially considering the fact that these store bought PB&J sandwiches are frozen and thawed before you eat them. I was wrong. They were actually pretty good! So when I was shopping in Save-a-Lot for groceries yesterday, I had the brilliant idea to make my own homemade, but way times better, uncrustable sandwich.

They were so easy to make, and my girls loved them too!

I made my uncrustable sandwiches really special by replacing the peanut butter with delicious hazelnut spread. I don’t know anyone who can resist chocolate hazelnut spread! And raspberry preserves really just added the right amount of sweetness and flavor!

How to Make Homemade Uncrustables

These easy sandwiches use common household items and they are so easy to make! Pop them in the freezer {instructions below} and they’re ready for your child’s lunch box whenever you need them!

Ingredients

  • chocolate hazelnut spread
  • raspberry preserves
  • whole grain white bread

You will also need a wide mouth Mason jar and a fork, plus a knife and spoon.

For each sandwich, use the Mason jar to cut out a circle from each slice of bread. Then, spread a thin layer of hazelnut spread on each circle.

Next, you’ll add about a 1 teaspoon of raspberry preserves to the center of one slice of bread.

I added too much hazelnut spread and jam the first time I tried to do this. So, be sure you spread the chocolate hazelnut thin across each slice and only a small amount of preserves! Otherwise, you’ll have a mess when the hazelnut spread and preserve ooze out of your sandwiches.

To make the sandwiches, you want to place the slice of bread with no preserves on top of the other slice and use a fork to seal the two slices together.

If you’d like to make a bunch of these yummy sandwiches ahead of time, you can lay them flat on a baking sheet in the freezer for two or three hours and then place each sandwich inside a gallon zip-top freezer bag.

To make this delicious lunch box, I put together a few things I know my kids always love.

  • Uncrustabes
  • sliced strawberries
  • blueberries
  • string cheese
  • yogurt in a tube
  • Capri-Sun {no high fructose corn syrup}

All of these ingredients were easily found at our local Save-a-Lot here in Harlan, KY. We love shopping at Save-a-Lot because they have great prices and great food! For instance, I’m pretty particular about the kind of drinks I serve my kids. I love Capri-Sun because there’s no high fructose corn syrup added. Fresh fruit is always a must in our house, and the yogurt tubes can be frozen and added to the lunch box in the morning {along with the frozen homemade uncrustables} and they’ll stay cool until your child is ready to eat lunch!
