Chickpea Salad {Vegetarian Mock Tuna} | A Virtuous Woman #realfood #healthy #glutenfree

This is one of my favorite recipes for lunch! It’s easy to put together, healthy, and tastes delicious! I’ve been a vegetarian for 15 years now. I used to love tuna salad sandwiches. This Chickpea Salad tastes a lot like tuna and makes a healthy replacement or alternative to tuna.

For a vegan version you could leave out the hard boiled eggs and simply reduce the amount of {vegan} mayonnaise a little. This recipe is also gluten free!

Chickpea Salad {Mock Tuna}

  • 1 (15 oz.) can of chickpeas, rinsed and drained
  • 2 hard boiled eggs, peeled and mashed
  • 1/ 3 – 1/2 cup mayonnaise {or to taste}
  • 1 tbsp. sweet relish
  • salt and pepper to taste

1. Mash the chickpeas. I like to do this in my food processor – just process chickpeas into small bits, but don’t puree! Otherwise, use a fork to mash the chickpeas into small pieces.

2. Add remaining ingredients and mix until combined.

3. Serve on your favorite sliced bread or with crackers. Enjoy!

  1. Thank you so much for this recipe! I keep chickpeas/garbanzos on hand at all times :) Although I will admit they mostly get made in hummus. Do you ever make "burgers" from them? Do you have a good recipe?
    1. Mia, I love to make hummus, too! And Falafels with chickpeas. Chickpeas are so delicious. I actually do have a really good recipe for Garbanzo Burgers. I try to share the recipe soon. :)
