Chocolate Banana Cupcakes

Chocolate Banana Cupcakes - or Muffins! Yum! @ AVirtuousWoman.org

These cupcakes are not as sweet as most cupcakes, so without the frosting, or even with just a dusting of powdered sugar, these Chocolate Banana Cupcakes are perfect for a healthy snack or breakfast. You could even serve these for a birthday party or for spring dessert.

Chocolate Banana Cupcakes {or Muffins}

Ingredients

  • 1 egg
  • 1/3 cup of applesauce
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup mashed bananas {about 2 large bananas}
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder
  • A hand full of chocolate chips {optional}

Direction

Preheat oven to 350ºF. Grease muffin tin or line them with cupcake liners. Whisk together the egg, sugar, applesauce, vanilla, and bananas. Mix the dry ingredients and add to the wet. Mix just until combined {don’t over mix}. Add some chocolate chips if you’d like. Bake for about 20-25 minutes for regular cupcakes/muffins. Check with a toothpick.

Yield: 10 – 12 cupcakes

Note: There are so many fun options for cupcake liners! I love picking them up whenever I find them!

TIP: Also, I use this Nordic Ware Natural Aluminum muffin tin and LOVE it. You know how you’ll buy muffin tins that are supposedly non-stick, but then the muffins always stick? Tell me I’m not the only one. Well, this Nordic Ware Natural Aluminum Muffin Pan is amazing because my muffins and cupcakes never stick to it when I choose not to use cupcake liners.
