Melissa’s Mostly Raw Tacos

Okay, so every so often I go on a raw food diet to cleanse my body and improve my health. Today is one of those days. Actually, I’ll be eating raw for at least a week or more. This is one of the easiest “raw” recipes I have and it’s based on a recipe I found in the book Rawsome Recipes by Robyn Boyd.In her recipe she uses cashews, which I am sure makes it even more yummy, but almonds are less fattening and just better for you.

Melissa’s Mostly Raw Taco Filling

2 cups raw almonds

2 cups fresh salsa (or if you don’t have fresh just use your favorite jarred salsa)

In a food processor, grind the almonds finely, but don’t turn it into almond butter. Add salsa and blend until combined.

So that’s the “meat” for your tacos. I usually double the recipe. My family – including the kids – love this recipe!

Now, you could go totally raw and use lettuce leaves as your “taco shells,” and I have done that. My favorite way to eat them, however, is in a lightly sauteed fresh corn tortilla.

Topping Ideas: shredded lettuce, sliced avocado or fresh guacamole, salsa, tomatoes, black beans, whole kernel corn, or any of your favorite taco toppings.

I served my tacos with a fresh Tomato, Black Bean, and Corn salad and sliced avocado. Makes a good topping, too!
