So July is coming to a close in just a few more days. I can’t believe it’s almost August! Where does the time go? One of my favorite things about summer is the fruit and right now peaches are available at most markets. I was raised in Georgia for most of my childhood and peaches are such a summer time treat!

If you’re able, you should definitely visit a peach farm! It’s one of our favorite activities to do when we are visiting family back in Georgia during the summer. But, this recipe is just as yummy with peaches from the grocery store.

The peaches are roasted in the oven for about 30 minutes which means when the peaches come out of the over they are perfectly soft and the natural sugars are even sweeter. Breyers Natural Vanilla is the obvious pairing with these delightful roasted peaches!

In fact, it’d be hard to go wrong with the recipe I’m sharing today. My family loved eating this dessert! My daughter Sarah has been out of town and I promised to make this for her when she gets home as she was really disappointed when she found out what we were having!

Don’t be overwhelmed by the homemade Honeycomb candy. It’s hard to mess up! In fact, I thought I had over cooked mine, but it turned out perfectly!

Roasted White Peaches with Honeycomb and Vanilla Ice Cream

Serves: 8 / Prep Time: 10 minutes, plus 20 minutes cooling time / Cook Time: 25 minutes

Make-Ahead: Honeycomb can be stored in an airtight container at room temperature for up to 3 days.

Ingredients

  • 1 cup sugar, divided
  • 1 lemon, zested
  • 4 ripe but firm white peaches, halved, pitted
  • Nonstick cooking spray
  • 1/3 cup honey
  • 1 1/2 tsp. baking soda
  • 4 cups Breyers® Natural Vanilla Ice Cream

Instructions

Preheat oven to 425°F.

In a small bowl, whisk 3 tbs. sugar and lemon zest for about 1 minute, or until sugar is fragrant and moist.

Arrange peaches, cut side up, in a 13×9-inch baking dish. Pour 2/3 cup water into dish. Sprinkle lemon sugar mixture over peaches and roast for 25 to 30 minutes, or until peaches are slightly softened and have released their juices.

Meanwhile, lightly spray a small baking sheet with nonstick spray. In a medium heavy saucepan over high heat, bring remaining sugar, honey, and 2 tbs. water to a boil, stirring constantly.

Reduce heat to medium-high and cook, without stirring, for about 5 minutes, or until a candy thermometer reaches 305°F.

Remove from heat and whisk in baking soda just until blended and mixture begins to bubble.

Gently pour hot mixture onto prepared baking sheet and cool. {I put mine in the fridge to cool faster.} Break honeycomb into small pieces and reserve in an airtight container.

Tip: You could totally make this Honeycomb candy ahead of time and store in an air tight container!

Spoon 1/2 cup Breyers® Natural Vanilla Ice Cream into each of 8 bowls. Top with warm roasted peaches and warm juices. Sprinkle with honeycomb pieces and serve immediately.
