Easy Pesto Pasta Salad

One morning, as I was trying to come up with a simple meal I could pack in our Easy Lunch Boxes, the idea for this salad popped into my head and it’s become one of our all-time favorite salad recipes! I’m sure your family will love this quick and easy recipe too!

I generally used whatever veggies I have on hand – from bell peppers, to grape tomatoes, olives, and cucumbers.

This salad is perfect for lunch as the main meal, for supper as a side dish. Perfect for a picnic like in my picture above, for potluck, by the pool, at the ice rink, or in your husband’s lunch. Really just about any time!

Easy Pesto Pasta Salad

  • 3 cups dry macaroni or shells or rotini pasta, cooked
  • 1 packet Good Seasons Italian Salad Dressing Mix
  • water
  • vinegar
  • olive oil
  • 1 jar pesto sauce
  • 1 red bell pepper, chopped
  • 2 medium cucumbers, chopped

Cook, drain, and rinse the pasta. In a large bowl, mix together the packet of Italian dressing mix with the water, vinegar, and olive oil according to the directions on the packet. Add the entire contents of 1 jar of your favorite pesto sauce. Whisk together well.

Add your choice of veggies. In the photos above I used red bell pepper and cucumber because that’s what I happened to have that day. Grape tomatoes sliced in half, olives, sliced avocado, and feta cheese would all be excellent additions.

Note: If you want to add avocado to this salad, be sure to cut the avocado right before you serve the salad so it does not turn brown. You can mix it in or simpily serve slices right on top of the salad.

Chill salad until ready to serve or pack into an Easy Lunch Box or other Bento Box and hit the road like we do.
