When it comes to the best muffin recipe, I have to say that these are some of my favorites. There’s nothing worse than buying bananas and then watching them just rot away on the counter, right?
Honestly, now that I have this recipe in my back pocket, I don’t worry about wasting bananas, ever. Because I know that if they happen to ripen too quickly, I’ve just set myself up perfectly to make these delicious homemade banana muffins.
I have a theory that the kids aren’t eating bananas as quickly as they used to just because they want me to make this bread. 😉 And when it tastes this good, I can’t say that I blame them!!
I love that this recipe can be used as a dessert or a great way to start the day for breakfast or the perfect addition to go with your piping hot cup of coffee.

Also, keep in mind that you can freeze your overripe bananas for later as well! I do this all the time if I have too many bananas that are just too ripe to eat. Just be certain to peel them first and pop them in the freezer! (and put them in a freezer-safe bag or container, of course!)

How to Make Banana Chocolate Chip Muffins
For this recipe you’ll need:
- 1 ½ cups all-purpose white flour
- ¼ teaspoon salt
- 1 teaspoon baking soda
- 2/3 cup sugar
- 1 egg
- 3 large over-ripe bananas, peeled and mashed
- 1/3 cup butter, melted
- 1 cup semi-sweet chocolate chips

Ingredients
- 1 ½ cups all-purpose white flour
- ¼ teaspoon salt
- 1 teaspoon baking soda
- 2/3 cup sugar
- 1 egg
- 3 large over-ripe bananas, peeled and mashed
- 1/3 cup butter, melted
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350F degrees.
- In a medium mixing bowl, mix together the flour, salt, and baking soda. Set aside.
- In another medium mixing bowl, beat the egg with a fork until the white and yolk are combined. Add the mashed banana and melted butter; mix well.
- Add the wet mixture to the dry mixture and stir with a spatula just until combined.
- Gently fold in the chocolate chips.
- Scoop the batter into 12 muffin tins lined with paper cupcake liners.
- Bake at 350F for 25-30 minutes. The tops of the muffins will be golden brown.
