So, my good friend, Leah Jones, has this cookbook called: No, We Don’t Only Eat Carrots and it’s filled with delicious yet healthy plant based recipes!

You all know I love to eat healthy {most of the time} and when Leah sent me a copy of her cookbook I couldn’t wait to dig into the pages and start trying new recipes. I made these cookies a few weeks ago and I’ve made them more than once!

In fact, these Ginger Coconut Cookies are so simple to make but even more than that they are healthier than your average cookie. The thing is, you wouldn’t necessarily think that they were healthy cookies if you didn’t know the recipe. And I’ll be honest, there has been a couple days where the girls and I grabbed a couple cookies as part of our breakfast.

Ginger Coconut Cookies

If you love cookies with just the right about of crunch and a hint of sweet ginger, this recipe is perfect for you! These Ginger Coconut Cookies are so simple to make, taste amazing, and are one of our new favorites! Recipe from the cookbook: No, We Don't Only Eat Carrots! by Leah Jones

Ingredients

  • 1 cup coconut oil {250 ml} {200 g}
  • 270 ml coconut cream {250 g} {1/2 pint}
  • 5 1/2 cups rolled oats {480 g}
  • 180 g pal sugar, ground {6 1/3 oz}
  • 1/2 tsp salt
  • 1 cup crystallized ginger, chopped {160 g}
  • 2 bulbs ginger {peeled and grated} {45 g} {1 1/2 oz}

Instructions

  1. Preheat oven to 400 degrees F or 200 degrees C.
  2. Line a large baking tray with parchment paper or oil the tray well.
  3. Melt the coconut oil in a small saucepan over a medium heat.
  4. Once runny, stir in the coconut cream well. Set aside.
  5. Pulse the rolled oats in a blender until ground and mix with the remaining ingredients in a large mixing bowl.
  6. Pour the coconut mixture over the oat mixture and stir until well combined.
  7. Scoop 1 tablespoon amounts of mixture onto the lined baking tray, flatten slightly and bake until golden brown - about 10 minutes.
  8. Remove the baking tray from the oven. Leave the cookies on the tray until slightly firm, then transfer to a cooling rack until cool and enjoy!

Notes

Alternatives:
Use raw sugar in place of the palm sugar - I used natural cane sugar
In place of the ginger, add 1 cup dried dates or dried apricots
