Easy 3 Ingredient Peanut Butter Cookies
These peanut butter cookies are incredibly easy to make – with just three ingredients! I like to whip these up when I need want something quick to serve my kids.

Plus, these cookies are gluten free! And, if you need a sugar free cookie – just replace the sugar with Splenda.
Ingredients
- 1 cup peanut butter
- 1 cup sugar
- 1 egg
Directions
Preheat your oven to 350 degrees. Combine all ingredients in a mixing bowl until smooth.
Roll cookie dough into 1 ½ inch balls and place on a lightly greased cookie sheet.
Use a fork to press the cookie balls flat and to make a criss-cross design on the cookie.
Bake for 10-12 minutes or until lightly golden brown around the edges.
Serve warm right out of the oven {my favorite way to eat any cookie} or allow to cool on a cooling rack and store in an air-tight container. Yields 18 cookies

Tip: If you use natural peanut butter, sometimes it can be difficult to mix the separated oil back into the peanut butter. Instead of working your arm to death, empty the contents of the jar into your food processor and whiz it around until blended and smooth.
