Preserving a Legacy of Family, Faith, and Food – November 1 – December 31
For as far back as I can remember, my mother made these crackers during the holidays. Hands down, these were my favorite treat! I have been making them for my family every year for over a decade now and they are still one of my favorites!
Cheese Crackers
1 lb. soft butter or margarine
1 lb. sharp cheddar cheese, shredded
1 cup pecans, finely chopped (optional)
1/2 tsp. cayenne pepper
1 tsp. salt
4 cups flour
In a large bowl, mix together first five ingredients until well combined. Gradually mix in flour, using hands. Form into logs about 1 inch thick and 10 inches long. Wrap in wax paper and chill at least 3 hours.
Preheat oven to 350 degrees. Slice dough into 1/4 inch thick rounds. Bake 10 – 12 minutes until slightly browned around the edges.Cool and serve.
I have to admit, we often can’t wait until they’ve cooled down to eat them! I hope your family enjoys these as much as we do.
