I walked into Kroger on Thursday morning and I knew that spring had officially arrived because strawberries were on sale for super cheap! I love strawberries. This recipe for Lemon Strawberry Cake Bars is simple to prepare and perfect for your spring or summer gatherings.

Lemon Strawberry Cake Bars

For this recipe you’ll need:

  • 1 cup of butter
  • 3/4 cup sugar
  • 1 egg
  • 2 lemons, zested
  • Juice of 2 lemons, divided
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup fresh strawberries
  • 1 cup powdered sugar

Lemon Strawberry Cake Bars

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Ingredients

  • 1 cup of butter
  • 3/4 cup sugar
  • 1 egg
  • 2 lemons, zested
  • Juice of 2 lemons, divided
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup fresh strawberries
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350 degrees, and spray an 8x8 baking dish with cooking spray.
  2. In a large bowl, whisk together flour, salt, and baking powder, set aside.
  3. In another large bowl, fluff together sugar and butter, mixing for about 2 minutes.
  4. Add egg, lemon zest, and juice from 1 1/2 lemons, mix well.
  5. Add dry ingredients to the wet ingredients, slowly, mixing well between additions.
  6. Gently fold strawberries into dough.
  7. Press dough into the 8x8 pan and bake for 38-40 minutes.
  8. Once cooled, whisk together powdered sugar and juice of 1/2 lemon to make glaze.
  9. Pour over bars, and enjoy!
