Healthy Breakfast Ideas

Q: Dear Melissa, I feel very overwhelmed and do not know where to start. I have a household of 7 and most are overweight including myself and my husband who are at least 100 lbs overweight each. I want so much to have a healthy home but I need help. I work outside of the home and need to start off eating things that they will try and do not take to long to prepare. I was making breakfast for them everyday before work after listening to devotion however I thought a good breakfast was sausage, egg, and cheese muffin. Now what do I make them? I believe incorporating less meat and more fruits and veggies sounds great but my where do I start?

A: Hi Channon, I’m so glad you’re trying to eat healthier! It’s so important to eat well and to teach our children to make good food choices. A good healthy breakfast might include:

  • homemade oatmeal – I like to top mine with nuts, dried cranberries or pineapple, brown sugar or maple syrup, a spoonful of coconut oil hemp seeds, and milk or almond milk
  • cream of wheat – I like to top my with maple syrup, hemp seeds, chia seeds, or honey toasted wheat germ and milk or almond/soy milk
  • sliced fruit or a fruit smoothie
  • yogurt parfait
  • vegan rice pudding
  • granola
  • cheerios, special k, raisin bran
  • toasted english muffin with a little butter and honey or fruit preserves
  • multigrain toast with a little butter and fruit preserves
  • veggie fajitas or breakfast tacos
  • yogurt topped with honey, fresh berries, and nuts
  • huevos rancheros con frijoles {toasted corn tortilla topped with refried beans and a fried egg and lettuce, tomatoes, salsa, etc.}

In our house we often eat leftovers from supper for breakfast – so you might find us eating vegetable soup with biscuits, leftover stir fry, spaghetti, or sweet potatoes {etc.} for breakfast.

Breakfast should provide you with healthy fuel for the day and really is the most important meal of the day. I hope these ideas help!

  1. Great breakfast tips, Melissa! I agree with starting out by replacing a few of the breakfast foods your family already eats with healthier alternatives: - multi-grains instead of white for toast, muffins, and waffles - healthy cereals instead of sugary cereals - using honey as a sweetener instead of white sugar - encourage eating an orange or other fruit instead of having sugary juices - try using a healthier oil or steaming your breakfast fajita veggies with a dash of water instead of frying them in animal fat or butter - try using a milk alternative on occasion (almond milk tastes great and has just a hint of nutty-goodness, as long as there are no nut-allergies in your family, and there is also coconut, hemp, and rice milks) to change things up and add a different flavor to your "usual" cereals (hot or cold) - instead of pop-tarts, go with all natural jams/jelly/preserves on toast Experiment and see what works for you and your family. :) I would also share that, if you find it difficult for you or your family to loose weight even after switching to healthier foods and establishing a regular exercise routine, you may need to consider the possibility that you or some members of the family may have an undiagnosed food intolerance or allergy and may want to get tested. I was 27 before I learned that I had a severe allergy to dairy (symptoms were there since my early childhood but they took a very serious turn for the worse in my mid-twenties). A year later I learned I also had a wheat allergy (non-celiac). Even though I was eating a very healthy, well-balanced, plant-based diet after discovering the severe dairy allergy, my allergy to wheat was contributing to stubborn weight-gain. No amount of exercise nor healthy eating could shed those pounds until I stopped consuming wheat. So if you find that healthy choices do not seem to be helping with your weight loss after giving it time and genuine effort, you should see a doctor and get tested for food intolerances or allergies. My favorite breakfast meal that I try to enjoy at least once a week is homemade gluten-free peach pancakes and a tofu scramble. You can do the scramble with egg if you prefer. So instead of opting for a large omelet with tons of cheese, try a scramble with diced onions, garlic, bell peppers, fresh spinach, and drained black beans seasoned with a hint of cumin, chili powder, and cilantro (I prefer parsley myself). I usually eat mine with the gluten-free peach pancakes, but I sometimes put it over gluten-free toast with some peanut butter. You could use multi-grain toast.
  2. Great ideas! All of these look yummy, especially the cream of wheat with strawberries! I'm a big fan of smoothies for breakfast, with an egg along side to balance out my blood sugar and keep me full a little longer.
  3. Growing up, I didn't like oatmeal, but I've been experimenting with different overnight and baked versions. My family has loved them. My vote is for your veggie fajita idea.
