Easy Lunch Box Menu & Chubby Taquitos

Chubby Taquitos Lunch Box Menu {Plus RECIPE} | A Virtuous Woman #easylunchbox

It’s been a while since I posted one of my girls’ packed homeschool lunch boxes. This one was a hit!

The other night I made Chubby Taquitos for supper. I found the recipe on Pinterest from Cinnamon Spice and Everything Nice. They were delicious! These Taquitos are perfect as an appetizer {think game day} or lunch or supper.

I had leftover filling, so I made more of the Chubby Taquitos for lunch. These Taquitos taste just as good at room temperature as they do warm.

On the Lunch Box Menu

  • Chubby Taquitos
  • Raw Broccoli with Ranch Dip
  • Sliced Gala Apples

Easy to put together. Nothing fancy, but just good food my kids love!

We are vegetarian, so I modified the original recipe to suit our needs. I also exchanged the baby spinach in the original recipe for cilantro which we really love. The original recipe called for 9 – 10 flour tortillas, but for some reason, this recipe made so much more than that {about 22 for me}. I could have easily halved this recipe and we would not have had leftovers.

Vegetarian Chubby Taquitos | A Virtuous Woman

Chubby Taquitos

Adapted from Cinnamon Spice and Everything Nice

  • 2 cans or 3 cups Fried Chick’n {vegetarian mock chicken}
  • 6 ounces cream cheese, softened
  • 1/3 cup sour cream
  • 1/2 cup salsa
  • 1 + 1/2 cups shredded sharp cheddar cheese
  • 1/2 cups chopped cilantro
  • salt and pepper to taste
  • small flour tortillas or corn tortillas
  • oil for frying

In a mixing bowl, mix together the Fried Chick’n, cream cheese, sour cream, salsa, cheddar cheese, and cilantro. Add salt and pepper to taste. Heat your skillet with a bit of oil over medium to medium low heat.

You may want to soften your tortillas in the microwave for 15 seconds to prevent them from cracking. If you do, keep a damp tea towel over them as you work.

Add 1 – 2 Tbsp. of the mixture in a log shape off center of the tortilla. Tightly roll and place seam side down in the skillet. Cook taquitos until golden brown, turning as needed.

You can serve these with sour cream, ranch dressing, salsa, or quacamole. I prefer them plain or with quacamole. They were delicious!
