This is a light and refreshing dish – perfect for a luncheon, appetizer, or light supper.
Mini Caprese Salad Bites
- Mini Mozzarella balls
- Cherry Tomatoes
- Salt
- Pepper
- Italian Seasoning
- EVOO
- Fresh Basil
Season your mozzarella and tomatoes separately with all the ingredients above to your liking. Let it sit in the bowl for about 10 minutes so it can marinate. You’ll notice that your dish will have a bit of that leftover liquid on the bottom, don’t throw that away.
Then just arrange them the way you’d prefer with a toothpick. Slice some basil and sprinkle on top and with a spoon drizzle a little of those juices from your marinate over your salad. Ready to serve!
Note: This keeps fine in the fridge for a couple of hours.
