Today’s super simple, easy lunch box was fun to make, and fun to eat! Aren’t the colors pretty? These Cream Cheese Pinwheels are filled with savory ranch cream cheese, olives, and peppers and more. This recipe is perfect for the lunch box – but it would also be perfect served as an appetizer at a party or at a picnic!

Cream Cheese Pinwheels

I adapted this recipe from the original recipe I found here. These would also make a great snack for after school or during a football game!

• 2 {8 oz.} packages cream cheese, softened
• 1/2 cup mayonnaise
• 1 package ranch dressing mix
• 2 green onions, minced
• 1/2 cup red bell pepper, diced
• 1 {2 oz.} can chopped olives
• 1/2 cup shredded cheddar cheese
• 1/2 cup chopped fresh parsley
• 4 {12 inch} flour tortillas, any flavor

Beat together cream cheese, mayonnaise, and ranch dressing until smooth. Stir in green onions, red bell pepper, and chopped olives until well combined. Spread each flour tortilla with 1/4 of the mixture. Sprinkle shredded cheese and chopped parsley over the top of the cheese and roll tortillas tightly and wrap with foil or plastic wrap.

Chill in the refrigerator for two hours or overnight. Slice rolls into 1 inch pinwheels. Enjoy!
