I’ve been saying it a lot lately – but it’s true – as a busy mom with hectic weeknight schedule, it’s really important to me to have recipes that are easy to prepare and that taste amazing.

This recipe takes a couple of quick and easy ingredient and dresses it up so that you feel like you’re eating a gourmet meal! Fresh frozen cheese ravioli takes just minutes to cook and a jar of Ragu Classic Alfredo sauce takes even less time to heat – which means whether you’re home late from karate classes or it was a long day in town, you can still have a great meal on the table in 15 minutes flat.

Better yet, this recipe is fancy enough that it’d be perfect at-home date night fare. Hmm, now that I think about it, it’d also be perfect for a ladies luncheon at church, or when your best friend comes to visit over lunch. Really, you can’t go wrong!

Cheese Ravioli with Arugula, Feta, Pine Nuts, and Avocado

  • 1 package frozen ravioli
  • 1 jar Ragu Classic Alfredo Sauce
  • 8 oz. arugula
  • 1/4 cup pine nuts
  • 1 avocado, peeled, sliced, and chopped
  • 4 oz. feta cheese, crumbled

Bring salted water to a boil and cook ravioli according to package instructions. Meanwhile, pour sauce in a small pot and heat over medium low heat, stirring occasionally.

Drain pasta and divide between four plates. Top with Ragu Classic Alfredo Sauce then place a small handful of arugula. Then, sprinkle with pine nuts, feta cheese, and avocado cubes.

I especially love the convenience and fresh taste that Ragu offers busy moms like me! And, I love that Ragu has no artificial flavors, colors, or high fructose corn syrup.
