One of my favorite things about summer is the beautiful tomatoes – especially when they are homegrown! This recipe is super simple to make and tastes amazing.
- 4 or 5 Heirloom tomatoes (different colors and sizes), sliced
- 1 fresh Mozzarella, sliced
- 3 Basil leaves
- 1 Oregano stem
- Juice from 1 Lemon
- Juice from 1/2 Lime
- 1/3 cup Olive Oil
- 3 Tbsp red wine vinegar
Slice the tomatoes and the mozzarella. Season each slice with salt and pepper. Arrange on a platter and make the vinaigrette.
For the vinaigrette: Whisk all the ingredients together. Set aside and make the salad.
Right before serving, thinly slice the basil leaves and remove some oregano from the stem. Pour some of the vinaigrette over the salad and add the basil and oregano on top.
Serve right away. Enjoy!
