Two Easy Sides for a Taco Dinner
One of the reasons I love to make tacos on a regular basis, besides the fact that we LOVE Mexican food and tacos just taste great, is that they are so quick and easy to make. Here are a couple of side dishes that are just as quick and easy to make and require only two ingredients each! Other easy sides would be Guacamole and Buttered Hominy.
Black Beans with Cilantro
- 1 – 2 can of Allen’s Seasoned Black Beans
- 1 bunch of cilantro
Open can of black beans and pour into small pot. Wash cilantro and chop. Add as much or as little of the cilantro to beans as you like… our family LOVES cilantro so I am apt to add the whole bunch! Simmer over medium low heat while the rest of your meal is being prepared. Be sure to make sure the beans don’t get too dry. If needed, add a little water.
Note: Allen’s Seasoned Black Beans are vegetarian.
Corn and Bell Pepper
- 1 can of whole kernel corn, drained or 1 bag frozen corn
- 1 red bell pepper, diced
Okay, so there’s really three ingredients… in a frying pan, add a tablespoon or two of butter (or margarine) to melt. Add the bell peppers and cook until tender. Add corn and heat through.
