Amish Sourdough Oatmeal Muffins

Here is another recipe using the Amish Friendship Bread Starter.

3/4 cup starter
1 1/2 cups flour
1/2 cup brown sugar
1 tsp. baking soda
1/2 cup buttermilk
1/2 cup oil
1 cup rolled oats
1 tsp. salt
1 egg

Stir all ingredients together, just until mixed. Fill greased muffin tins about 2/3 full. Bake at 375 degrees for about 20 minutes or until lightly golden brown and a cake tester or toothpick comes out clean. Yields about 18 muffins.
