Menu Plan Monday

This morning, I turned on Tiny Tots for the girls before we started school. My littlest one, Laura, LOVES Tiny Tots. And wouldn’t you know it. It happened to be one of the programs that Laura was in! She was so excited to see herself on TV. She said, “This is the best day of my life!!” Tiny Tots comes on 3ABN, a Christian television station. If you have dish network it is channel 9710. We always DVR the program so we can watch it on our own schedule.

My list for my meal rotation for the year is based on how many times I want to prepare these meals for my family each month. The numbers you see next to each meal represent the number of times per month we would eat this meal.

Notes:

1. You’ll notice some menu items are in “quotes.” This is because our family is vegetarian and the recipes I use call for a vegetarian substitute or equivalent for the meat.

2. Salad would be added to any of the above meals when available. I love Salad!

3. Recipes calling for cheese would be changed in the event that cheese was not available. For instance if I have soup with grilled cheese sandwiches, but no cheese available, I would simply toast the bread.

4. My Supper Menu List has 30 different meals. I really like to eat a variety of foods, so I can serve each meal once a month. No appetite fatigue for us!

5. Desserts are an essential part of your food storage. Sweets make life a little sweeter and will cheer your children even if the world is falling apart. And sweets aren’t just for desserts. Having a good supply and variety of homemade jams and jellies (or store bought if you do not can) to spread on homemade bread would be a real treat as well!

6. Homemade Pickles, Pickled Beets, Pickled Peaches, and other condiments can also be served and add variety to the flavors and last for a long time in storage.

7. Recipes requiring milk are easily changed using powdered milk.

8. On top of having your food storage for your menu list, I would suggest storing a good number and variety of dried beans, lots and lots of spices, a lot of cooking oil, and lots of water.

This Week’s Menu

I am so excited about having the whole week to look forward to mundane productivity. I love routine! The older I get, the more I crave routine. I woke up this morning at 5:30 – so easy to do since the time changed! Now we are delving into our schoolwork as I try to get the fire stoked and burning hot. I did want to take a couple of minutes to post my menu for the week since I have not been able to do so in several weeks because of our insane schedule and so much traveling.

Meal Planning from the Pantry

This afternoon I am beginning a major “overhaul” and inventory of my extensive pantry. This week’s meals will come solely from those items in our pantry that need to be eaten. We have always stockpiled food. Unfortunately, I don’t always do the best with keeping things rotated. So, as I inventory, I will be making menu plans for the days (weeks?) to come.

My goal is to have a rotating menu plan that will help me to cook healthy foods from our stockpile/ pantry. The rotating menu plan should help me to be sure we have at least a years supply of food stored up. Currently, we have several month’s worth of food stored, but because I have not had a real plan for the food I can’t determine how much food is stored and how long it will feed us. I do know that we have been eating mostly out of the pantry for the last few months without doing much grocery shopping at all. I will share more about this almost overwhelming undertaking later!

Menu Plan Monday

This weekend we were blessed to have the conference Youth Evangelism Coordinator and his wife stay at our home. It was a really nice weekend! This week starts our new Pathfinder year on Tuesday. Lots of planning needs to take place between now and then!! I teach the Adventurer class and help with Pathfinders.

This weekend I am taking a group of teen girls from our church and community to Indian Creek Camp (close to Nashville, TN) for the Young Women’s Retreat! I am excited about that. It is my prayer that these girls draw close to God and come home filled with His Spirit!

So for my menu this week….

I have added a new “section” to my menu planning. During the school year I like to give the girls a snack around 11 am to keep them going until lunch time. In the past I have not planned these out, so I think it will make coming up with a snack easier for me if it isn’t planned “at the last minute.”

It feels so nice to have a regular routine again. I thrive on routine! It comforts me. I have planned my menus off and on over the summer, but with 3 VBS programs, 4 days at minister’s meetings, 8 days at the Camporee, 4 days at 3ABN, and more… I have not had much time to plan a menu. This Week’s Menu

One word describes this week’s meals…. FAST. I mentioned last week that this week was our first round of VBS. I happen to be writing this post at 11:59 pm on Monday night – that is how crazy my day has been. Our first night of VBS went really well and we have some new children that are really excited about it! I am so thankful. God is soooo good to us!

Anyway, back to the menu… I hardly have time this week to even think about food so I have chosen a very sparse menu this week. We won’t have much of a supper most nights. I serve the children who come to VBS food each night, healthy snacks and often more. Most of the children who come are very, very poor and usually very hungry so I always try to feed them. Tonight we had “Ants on a Log” (celery, peanut butter, and raisins) along with donuts and juice. One little boy in particular kept coming back and telling me he was hungry and so I then fixed all the children graham crackers with peanut butter and raisins to make sure they were full. On Friday night I will be feeding them a full fledged supper – Haystacks.

Menu Plan for the Week

This week promises to be very full and perhaps not so great as far as meals go. I will be doing really good if I can stick to the plan! Over the next six weeks we have scheduled:

- 3 Vacation Bible School Programs (one for each of our three churches) and I am teaching and decorating and planning

- 4 days at the Minister’s Meetings at Indian Creek Camp (close to Nashville, TN)

- 1 week at the Pathfinder Camporee in Wisconsin

- starting back to homeschool

- 1 weekend camping trip before the camporee in Wisconsin so that the girls can finish up their honors that we were behind on this past Pathfinder year.

- having windows installed

- gardening and harvesting and canning

So, if we get a few good meals I will be happy. I get tired just thinking about it! But each event is sure to be fun and I am looking forward to each one!

Anyway, for this week’s meal… the last two days have been kinda lean on food – not that we don’t have food to eat, but we tend to only buy food that requires cooking, if you get my drift.
