I have made similar dishes in the past, but couldn’t find a recipe, so I just used ingredients that I thought would go well together. It was so easy and so good, this will be a recipe I make again and again!
Melissa’s Mexican Pie
Filling:
1 can Vegeburger or 1 bag Morning Star Farms Vegetarian Burger Crumbles or 1 lb. ground beef
2 tsp. Bill’s Best Beaf Seasoning (optional)
1 med. onion, chopped
2 – 3 tbsp. taco seasoning or 1/2 packet of taco seasoning
1 cup shredded cheddar cheese
Topping:
1/2 cup cornmeal
1/2 cup flour
2 tsp. baking powder
2 tbsp. sugar
1/2 tsp salt
1 egg
1/2 cup milk
2 tbsp. oil
1 jalapeno, finely chopped
Saute onion until soft. Add vegeburger and brown for a few minutes. Add 1 can Rotel and taco seasoning. Grease iron skillet. Place vegeburger mixture in skillet. Top with shredded cheese.
In a bowl, mix together cornmeal, flour, baking powder, salt, egg, milk, and oil. Mix together until just combined. Add jalapeno pepper, and combine. Pour corn bread batter over vegeburger mixture.
Bake at 400 degrees for 20 – 30 minutes until cornbread topping is golden brown.
I served this with hominy, salad, and Mexican Pizza! Yum!
