This is a simple {decadent} cake that I’ve been making for years. Since it’s so easy to pull together, it’s perfect for potluck, picnics, or a busy weeknight, but it’s also great for the holidays – Valentine’s Day or Christmas.
Even better, this recipe is inexpensive to make. I was able to pick up all of the ingredients I needed at my local Dollar General store – one of my favorite places to shop frugally!
Cherry Fudge Cake
Ingredients
- 1 box Devil’s Food Cake Mix
- 1 can Clover Valley cherry pie filling
- 2 eggs
Frosting
- 1 cup Clover Valley granulated sugar
- 5 tablespoons butter
- 1/3 cup milk
- 6 oz package of Clover Valley semisweet chocolate chips
In a mixing bowl, combine cake mix, cherry pie filling, and eggs. Mix together by hand. I like to use a wooden spoon for this.
Pour batter into greased 13x9x2-inch glass pan. The batter will look lumpy and it’s thick, so just spread it out as evenly as possible.
Bake at 350° about 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Place cake pan on a cooling rack and get ready to make the frosting while the cake is still warm.
For frosting, place sugar, butter, and milk in a saucepan.
Bring to a boil stirring constantly. Boil for one minute – set a timer. Watch carefully!
Remove from the heat and stir in chocolate chips until smooth.
Gently spread warm frosting over warm cake.
Allow to cool completely and serve. Enjoy!
