This is one of my favorite go-to meals when I’m in a hurry! It’s super simple to put together and it can feed a crowd!
I have this great big bowl that I always use to toss this salad together. You can easily double the recipe when you have a really big crowd of people to feed, too. With my large family, one recipes is usually just enough so that we don’t have leftovers.
I will say that leftovers are not that appetizing because the lettuce wilts and the chips get soggy. However, that’s almost never a problem in my house!
Taco Salad
- 1 bag tortilla chips
- 1 can kidney beans, rinsed and drained
- 1 head of iceberg lettuce, chopped
- 1 – 2 tomatoes, chopped
- 1 onion, chopped
- 1 can veggie burger or 1 pkg. frozen veggie burger crumbles
- 1 large bottle thousand island dressing
- 8 oz. shredded cheddar cheese
In a frying pan, cook onions and burger until onions are tender. Allow mixture to cool slightly before adding it to a large bowl. Add remaining ingredients to burger mixture and toss to coat everything well with the dressing.
Serve and enjoy!
