French Lentils are these tiny little dark green lentils and they taste wonderful. I am sharing my favorite recipe for these little jewels along with a recipe for quick and easy no rise Honey Dinner Rolls. I hope you enjoy!
- 1 cup diced onions
- 3 tbsp olive oil
- 3 carrots, diced
- 1 celery stalk, diced
- 3 large garlic cloves, minced
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 tsp dried thyme
- 1 Turkish or 1/2 California bay leaf
- 2 cups dried French green lentils, rinsed
- 5 cups water
Heat olive oil in a pot. Add onions, carrots, and celery and cook over medium heat until tender. Add remaining ingredients. Bring to a boil, then reduce heat and simmer, partially covered, until lentils are tender and most of the liquid has been absorbed, 15 to 20 minutes. Discard bay leaf. Serve.
Note: This recipe feeds my family of 7 with each of us having one serving (the youngest two have smaller portions) so I would say that it serves 6 bowl fulls.
Honey Dinner Rolls
- 2 tsp. yeast
- 1/4 cup warm water
- 1 tsp honey
- 1/2 tbsp. baking powder
- 1 tsp. salt
- 1/2 tsp baking soda
- 2 1/2 cups whole wheat flour, freshly ground
- 1 stick butter, melted
- 1/4 cup honey
- 3/4 cup buttermilk
Mix first three ingredients and let set for a couple of minutes, till yeast is bubbly. Add remaining ingredients, and mix together gently until all ingredients are incorporated. If dough seems a little sticky add a little more flour until you have a nice soft dough that does not stick to your hands but is not too dry. Turn dough onto the flour-dusted counter top or tea towel (for easy clean-up) and press out in a rectangle about 1/2 inch thick. Divide into twelve squares. Bake at 375 degrees for about 15 minutes. You can brush the rolls with softened or melted butter when they first come out of the oven.
