I have to say, this recipe is a family favorite. I’ve had this recipe for over twenty years and still love it. For my family of 6 {four kids still at home} I usually double this recipe because everyone wants seconds!
This recipe would also be great for potlucks and sometimes I’ll even serve it when we have picnics in our yard.

Pineapple Cheese Casserole
- 1 20 oz. can pineapple tidbits
- 1/2 cup sugar
- 2 tbsp. flour
- 1 cup shredded cheddar cheese {medium or mild}
- 1/2 stick butter or margarine, melted
- 1/2 cup Ritz cracker crumbs {9 or 10 crackers}
Drain pineapple, reserving 3 tbsp. of juice. Combine pineapple, juice, sugar, flour, and cheese in a 1 quart casserole dish. Combine cracker crumbs and melted butter and add to top of casserole.
Bake at 350 degrees for 25 – 30 minutes or until casserole is lightly golden brown on top. Serve and enjoy!
