What I ate last week…

Meal planning for me is one those things that saves me a lot of time and stress during the week. In fact, it makes life so much easier to have a menu plan that I can’t imagine not meal planning. Eating healthy meals each day is one of the ways I am working to lose a little more weight. It’s been a really long time – mean probably years since I’ve share my meals with you guys. So I thought it’d be fun!

I’ve been vegetarian for 20 years now – since 1998 when I was just 23 years old! So, of course, my meals reflect that. I did not think to photo every meal, so I’m just sharing the ones I did take a picture of.

Also, while I used to make everything from scratch, these days I am usually looking for the quickest way to feed my family while still maintaining a good healthy diet. Our schedule is crazy. I’m hardly ever home. I do try to cook from scratch when I have time, but I don’t beat myself up for not being able to always do that.’

This was a quick and easy meal. Really. Doesn’t get easier than this!

  • Scallion Pancakes {Trader Joe’s}
  • Ready Made Brown Rice {Trader Joe’s}
  • Asian Crunch Salad {Dole Bagged Salad}
  • Gyoza Dipping Sauce {Trader Joe’s}

Not the prettiest presentation, but really good! The taco “meat” filling is made with Quorn Meatless Crumbles and taco seasoning. Topped with: sour cream, mango salsa, sweet onion, Monterey Jack cheese, and lettuce.

This meal was delicious and so simple to put together!

This is one of my favorite lunches to make. One of my favorite salads in general for supper too!

Several days last week I ate peanut butter and jelly sandwiches. I find that when I’m leaving the house by 5 am to get to the ice rink, a pb&j sandwich is quick and easy and very filling. I don’t get as hungry in the morning. I usually grab and orange to eat as a snack. This breakfast was really yummy and something different from the usual!

Church potluck. This meal was almost vegan which was exciting for me. I love eating fresh veggies! Really, one of the best church potlucks I’ve eaten in the recent past.

  • strawberry fluff dessert

So there you go. Six of my meals from last week. Nothing took very long to prepare. Everything tasted delicious and most of it was healthy! I’m so excited to continue my journey toward getting in shape, losing weight, and eating healthier than ever.
