Fresh and Easy Lunch Box Ideas @ AVirtuousWoman.org

Today’s lunch box was so simple to put together. I’m a big fan of packing quick and easy lunch boxes when we’re on the go.

Easy Lunch Box

We ate this particular lunch beside the pool, but it would work equally well at school, work, at the park, or even at the ice rink!

What I Packed

  • Fresh Green Salad
  • Blueberries
  • Sliced Strawberries
  • Sandwich {not pictured}
  • Water Bottles

The salad was left over from our dinner the day before. It was a mixture of green leaf lettuce, iceberg lettuce, fresh parsley and cilantro, cucumbers, and grape tomatoes. I added a serving of ranch dressing below the greens and did not toss it together until we were ready to eat. That way the greens did not wilt.

Fresh blueberries and strawberries are in season right now and so we seem to always have them in the fridge! I also brought along simple sandwiches made with our favorite sandwich slices. An afternoon by the pool can really work up an appetite!

Of course, this lunch was packed in my favorite Easy Lunch Box containers.

What’s your favorite way to eat salad for lunch?
