This quick and easy recipe was given to me by my mother-in-law a long time ago. It’s one of my favorite easy meals. This quiche would be perfect for lunch or supper or even for a ladies luncheon!

Vegetarian Sausage and Cheese Quiche
- 1/2 lb. ground sausage {see note below}
- 1/4 lb. sliced mushrooms or 1 can diced mushrooms
- 3 eggs
- 1/2 cup cream or milk
- 1 cup grated cheddar cheese
- salt to taste
- 1 unbaked pie crust
Brown the sausage and mushrooms in a bit of oil. In a mixing bowl, whisk together milk and eggs. Place sausage mixture into bottom of pie crust. Sprinkle with cheese. Pour egg mixture over the top.
Bake at 425 degrees for 30 minutes or until center is set.
Note: You can use your favorite vegetarian sausage. Here are a few suggestions:
- Morning Star Farms, patties crumbled
- Gimme Lean Sausage, 1 half package crumbled and browned before adding mushrooms
- 1/2 cup Sausage TVP crumbles, reconstituted by covering with very hot water
